Chardonnay + Milanesas: an Argentine Tradition

Meschini Milanesas
 
Ingredients:
  • Chicken breasts, scallopini (our butcher cuts them in the thin scallopini fashion for us, or you can slice breasts in half lengthwise and pound using a meat hammer to obtain thinner cut)
  • Bread crumbs (we love Bella brand)
  • Eggs,  6 or more
  • Fresh Parsley, chopped
Step 1 - Heat oven to 400 degrees. In a large bowl, whisk eggs with parsley and add chicken.

Step 2 - Bread chicken cutlets: Don’t go easy on them! Eugenio pounds and prods to make those bread crumbs stick.
Step 3 - Spray cookie sheet with nonstick spray. Brush milanesas with olive oil and bake until cooked through, crispy and delicious.

Step 4 - Enjoy with a fresh tomato salad, roasted potatoes and our Famiglia Meschini Chardonnay Reserva! We love to squeeze fresh lemon juice on our milanesas. Our Minnesota friends can find it at South Lyndale Liquors

Speaking of gathering with friends, we were honored to host an amazing group of wine and food aficionados at our home for a wine and empanadas party last week. The weather was perfect, the wine was flowing and Del Sur Empanadas kept the empanadas coming. Eugenio delighted the guests with his asado or authentic Argentine barbecue! Everyone left with bellies full and hugs all around. We shared stories near and dear to our hearts and cannot wait for the next magical dinner! Stay tuned for more events to come.
